John Comeau shares his experience with Horsestooth Hot Sauce which is operated in Fort Collins, Colorado and it is our first Colorado Hot Sauce operation featured on CraftHotSauce.com
How the Horsetooth Story Begins:
My mother was from the south so we always had Louisiana style hot sauces in our refrigerator. I was horticulture major at Colorado State University and during that time I would grow a few habanero plants at home and make hot sauce.
I was laid off from my job and I decided that I didn't want to work for someone else for the rest of my life. I started the company in 2008 with a couple of credit cards and signed up for 2 farmers markets in Fort Collins. At the time I had three sauces. We now have 10 products in our line including BBQ Sauce and Bloody Mary Mix.
My sister Michael Ann and I are co-owners of Horsetooth Hot Sauce. She came on board after being laid off in 2009.
The two of us have grown the company over the years and we now have 5 employees and accounts in about 35 states.
We make Louisiana style hot sauces using a variety of peppers. Mostly habaneros but also cayenne, scotch bonnet and chipotle.
Some of our sauces have fruits in them as well and we like to use garlic and onion to really give the sauce some flavor and make it stand our from many other vinegar based sauces.
We also do many "Small-batch" sauces which are usually more unique due to the ingredients and availability. A few examples of our small-batch sauces are. "This Little Piggy" which is a cayenne and maple smoked bacon hot sauce. Another is "Mexican Stand-off"which has guero peppers, tequila and prickly pear cactus. We also have a habanero mustard that is popular.
Our most popular sauce is "The Green" Green habaneros, tomatillos, serranos, garlic and onion.
We are in the process of building our own production facility which really exciting for us.
